This is a vegan healthy recipe of Choc-chip cookies. The below recipe is with vegan ingredients, if you wish to make a standard recipe, you can substitute baking powder with 1 egg white and almond butter/oil with the regular butter.
Step 1: Gather all the ingredients and materials needed:
- ½ cup oat flour
- ½ cup all-purpose flour
- 2 tablespoon almond/peanut butter
- 1 teaspoon baking powder
- ¼ cup coconut oil/coconut milk
- ½ cup water
- ¼ cup castor sugar
- 2 tablespoons vegan chocolate chips
Step 2: Mix all the wet ingredients with sugar and butter, until the sugar and butter dissolve. Add more water if required, until you achieve a semi solid consistency.
Step 3: Mix all ingredients well and add the chocolate chips.
Step 4: Place a spoonful of dough on a parchment paper in a baking tray using a cookie cutter.
Step 5: Bake at 170 C (or 350 F) for 25-30 minutes.
Step 6: Allow to cool on rack for 10 minutes
- The cookies need to be stored in an airtight container else, they will turn moist.
